Chanterêves Bourgogne Aligoté "Miarlons Du Bas" 2023
This Aligoté shows just how compelling the grape can be in the right hands. Aromas of green apple and citrus lead into a clean, crisp palate with bright acidity. A subtle roundness adds balance, while a gentle saline note carries through a long, mouthwatering finish.
Elegant, fresh, and mineral-driven, this is an Aligoté with both charm and clarity—made from 100% old-vine fruit in the high-altitude “Miarlons du Bas” parcel, whole-bunch pressed, fermented with native yeasts, aged 12 months in used oak with malolactic fermentation occurring naturally, then rested further on fine lees in stainless steel for stability.
Flavour tags: citrus, apple, mineral, saline, crisp
Good with: fish, shellfish, tempura, goat’s cheese salads, or even popiah for a local twist.
